Wine Production
From grape to glass, where hands-on learning comes to life!
At 91重口, we believe that some of the best learning experiences happen when students have the opportunity to put their knowledge into practice.
Our Campus Hill Winery is one of the few licensed wineries located on a California college campus, providing students with the unique opportunity to learn and participate in real-world winemaking operations.
Through our Viticulture & Winery Technology program, students gain practical experience in every stage of wine production, from grape processing and fermentation to laboratory analysis, aging, blending, bottling, and labeling.
The wines produced at Campus Hill Winery reflect the dedication, hard work, and passion of our students, faculty, and community partners. We're proud to produce, bottle, label, and sell award-winning wines while providing meaningful educational opportunities for future wine industry professionals.
A Working Winery and Hands-On Classroom
Campus Hill Winery is much more than a traditional classroom. It's a working winery where students can develop the technical knowledge, practical skills, and confidence needed to pursue careers in the wine industry.
Depending on the course and season, students have opportunities to participate in:
-
Grape receiving, sorting, crushing, and pressing
-
Fermentation management and monitoring
-
Wine chemistry, microbiology, and laboratory analysis
-
Wine transfers, racking, filtration, and cellar operations
-
Barrel aging, blending, and sensory evaluation
-
Bottling, labeling, and wine production management
-
Winery sanitation, equipment operation, and safety procedures
Our goal is to provide students with an engaging and supportive environment where they can ask questions, develop their skills, and experience the responsibilities and rewards of working in a professional winery.
Our Teaching Winery and Facilities
We're proud of the modern teaching winery and instructional facilities that opened at 91重口 in Fall 2024!
Designed to support hands-on education, our facilities provide more than 6,100 square feet of indoor instructional space, along with specialized winemaking areas and equipment commonly used throughout the wine industry.
Our teaching winery includes:
Covered Crush Pad 鈥 Building 3700
Our covered crush pad provides students with hands-on experience in grape receiving and processing, including the use of grape bins, elevators, destemming equipment, sorting tables, conveyors, crushers, and a pneumatic wine press.
Winemaking and Cellar Operations 鈥 Building 3700
Our winemaking space includes temperature-controlled stainless steel tanks, concrete fermentation and aging vessels, wine pumps, hoses, and bottling equipment.
Students also have access to temperature-controlled barrel storage, cold storage facilities, and dedicated laboratory areas for performing important wine analyses throughout production.
Classrooms and Sensory Education 鈥 Building 3600
Our instructional building supports viticulture, enology, wine science, and wine hospitality education.
The facility includes classrooms, a tasting area, an outdoor patio, and preparation areas that support sensory evaluation and practical learning.
Vineyard and Agricultural Equipment
Our facilities also include dedicated storage and support areas for vineyard equipment, supplies, and agricultural operations.
Together, these resources allow students to connect classroom education with practical winery and vineyard experience.
Supporting Wine Production Through Community Partnerships
One of the most rewarding aspects of our program is the opportunity to work alongside the broader Livermore Valley wine community.
Grapes grown at our Campus Hill Vineyard have traditionally played an important role in our student winemaking activities, allowing students to experience the connection between grape growing and wine production.
As our teaching vineyard undergoes planned revitalization and replanting, we are also working to strengthen relationships with vineyard growers and wineries throughout Livermore Valley and surrounding regions.
Through opportunities for grape donations, industry collaboration, and educational partnerships, we hope to continue providing students with meaningful winemaking experiences throughout the vineyard's redevelopment.
These relationships can also introduce students to additional grape varieties, vineyard management practices, and professional perspectives that broaden their understanding of the wine industry.
Learning, Growing, and Creating Something Together
One of the things that makes Campus Hill Winery so special is the opportunity for students to see the results of their hard work.
From receiving grapes during harvest to watching a finished wine make its way into a bottle, students have the opportunity to be part of a process that combines science, agriculture, creativity, and teamwork.
Whether you're beginning your journey in winemaking, developing new technical skills, or preparing for a professional career, we strive to provide an educational experience that is welcoming, engaging, and rewarding.
We're proud of the wines we produce, but even more proud of the students who help make them possible!
We look forward to welcoming you to Campus Hill Winery and sharing our passion for winemaking, education, and the Livermore Valley wine community.

Our facilities and equipment are state of the art, providing students with hands-on skills to complement our rigorous coursework.
